Ingredients

 

Pizza base
200 gr cherry tomatoes
200 gr Perline® eggplants
200 gr mozzarella
a few black olives
basil leaves
oregano
capers
salt
extra virgin olive oil

PIZZA PERLINA

Serves 4

Preparation


Slice the Perline® without peeling and grill lightly on each side. Cut tomatoes in halves and place them on a plate; season with salt and olive oil. Cover pizza base with tomatoes, Perline®, olives, basil, oregano and olive oil. A few minutes before the end of cooking, add the sliced mozzarella and let cook for a further 3 minutes.
