GRILLED PERLINA EGGPLANTS

600 gr Perlina eggplants
Fresh parsley as needed
A few garlic cloves, minced
Lemon juice as needed
Salt
Extra virgin olive oil as needed
Directions: Slice the eggplants in a half lengthwise without peeling. Heat a grill pan and cook the sliced eggplants for about 5 min on each side. Place on a serving dish and sprinkle with parsley and minced garlic. Then drizzle with olive oil and lemon juice. Serve cold as a starter or side dish.
